The word "cabbage" covers a whole family of vegetables that have almost nothing in common on the plate. Here you will find Wiener Violetter kohlrabi, Ramoso Calabrese broccoli, Snow Ball X cauliflower, a white cabbage, a red cabbage and Brussels sprouts.

🥦 Six vegetables, a single species

All these brassicas derive from the same wild plant, Brassica oleracea, and selective breeding has simply emphasised a different part in each. Kohlrabi forms a tender bulb above the ground and is ready to harvest in 8 weeks, making it the quickest member of the family. Broccoli and cauliflower are harvested at the head before the flowers open, and require more careful management since a bolted head is a lost one. Headed cabbages, white or red, tighten their leaves into a dense ball and are cut in a single stroke in autumn. Brussels sprouts, meanwhile, occupy the ground for nearly a full year before producing their first sprouts after the first frosts.

Without netting, the cabbage white will strip the bed

Two pests are enough to devastate a brassica crop within days. The large white butterfly lays eggs on the underside of leaves and its caterpillars strip everything down to the veins; the flea beetle peppers young plants with hundreds of tiny holes. A fine-mesh insect net fitted at planting time deals with both at once, and it is worth more than any treatment applied after the damage appears. Plan for it before you sow, not once the harm is already visible.

Raising seedlings in trays frees up the board

A winter cabbage occupies its space in the garden for 6 months, yet its first six weeks require only a tray. By sowing in a 24-cell tray, you keep the bed free for a lettuce or radish in the meantime, and then plant out already-formed root plugs that establish without any setback.

Transplanting itself calls for a precise technique. Take the seedling at the 4 true-leaf stage and plant it deeper than it was in its pot, burying the stem right up to the first leaves: the buried portion will then produce roots along the stem, giving the plant far greater resistance to wind, which matters considerably for a Brussels sprout that will reach 80 cm. A thorough watering on planting day, followed by a mulch, completes the job.

📅 Sow in spring, eat in winter

The brassica calendar often surprises beginners, as most sowing takes place in spring for an autumn and winter harvest. Winter cabbages are sown from March to May, transplanted 5 weeks later, and harvested from October to February, cold weather even improves the flavour of Brussels sprouts and kale. Kohlrabi and broccoli, being considerably quicker, are sown from March to July and cut 2 to 3 months later. Sow under 1 cm of soil and expect germination in 5 to 8 days in a grow medium at 18 °C.

📏 Spacing makes the head

Kohlrabi

25 cm between plants; harvest when the head reaches 7 cm, beyond that the flesh becomes fibrous.

Brocoli

50 cm, and cut the central head before flowering to trigger lateral side shoots.

Headed cabbage

50 to 70 cm depending on the type; a tight cabbage produces a head half the size.

Brussels Sprouts

60 cm, staking recommended, and harvest the apples from the bottom upwards after the first frosts.

🫙 A supply lasting several seasons

A box of 12 varieties will inevitably be sown across several seasons, and these seeds handle that without any trouble. Store opened packets dry, cool and away from light, in an airtight container rather than loose in a drawer. A cabbage seed kept this way retains good germination rates for 4 to 5 years. After that, a test with 10 seeds between two sheets of damp paper will tell you within a week whether the packet is still worth a seedling tray.
