These are organic seeds for sprouting, sold without a sprouter. You choose an assortment, soak the seeds for 6 to 12 hours, then set them to sprout. Cut at the base of the roots once the shoots reach 5 to 10 cm.

Brassicas

Broccoli, cabbage, rocket, mustard, and radish sprouts have a flavour ranging from peppery to distinctly hot.

Legumes

Red lentil, mung bean, pea and adzuki bean give soft, crisp sprouts with a satisfying bite.

Wheat and sunflower

Their shoots are tender and top a slice of bread without overpowering everything else.

Herbs

Parsley, watercress, alfalfa, and red clover bring fresh notes, to be scattered over a dish at the last moment.

🔢 What the number means

The number after the assortment name is the number of varieties included in the kit, not the quantity of seeds. Germes 10 contains 10 different packets, Germes 20 contains 20, and Germes nutri 10 brings together 10 species chosen for their nutritional density. Each variety comes in its own labelled paper packet, and each packet covers several successive sowings. The 10-variety kit includes, for example, mung bean, radish, alfalfa, rocket, pea, lettuce, broccoli raab, cress, sunflower, and fenugreek, which already covers the four families described above. Moving from 10 to 20 varieties doesn't give you more sprouts, it gives you a wider range of flavours to grow side by side.

🌱 Soaking, then the routine

Start with soaking, 6 to 12 hours in water depending on seed size, long enough for the outer coat to soften. Drain, spread evenly on your chosen medium, then water once or twice a day until harvest. Keep the seeds away from light for the first two days, then move them into natural light for the remainder. When a seed fails to germinate, the cause is almost always one of these three steps.

The propagator that receives the seeds

These seeds are best germinated in a sprouter. The jar sprouter can be scaled up to three units running in parallel, while the two-tray sprouter handles two staggered batches in a more compact format. The choice comes down to what you actually consume each week, not the number of varieties you plan to try.

Soaking that goes on too long

Skipping the soaking leaves a proportion of seeds dormant, and the mat germinates unevenly. Letting them soak for a full day creates the opposite problem, as the seed suffocates in the water and ferments before it has a chance to germinate. 6 to 12 hours avoids both risks, and draining must be thorough, with no residual water left at the bottom of the container. A sour smell during germination is almost always a sign of one of these two mistakes.

🥗 What it delivers in the kitchen

Sprouts are eaten raw and added at the last moment, on a salad, a soup, an omelette, a slice of toast or a bowl. They bring a crunchy texture and a colour that cooking destroys, which is why they are added once the heat is off. A single packet covers several successive seedlings, and there is no need to sow everything at once. The flavour varies considerably from one variety to the next, so growing two varieties side by side gives more than a large packet of just one.

📦 Storing the sachets

A seed for sprouting is a living seed, and its germination rate declines over time with heat and moisture. Keep the packets sealed, dry and away from light, in an airtight container rather than loose in a kitchen drawer, where steam and temperature swings will do their damage. A properly stored packet maintains reliable germination for one to two years depending on the species, with legumes lasting longer than brassicas. Note the date you open each packet, because a falling germination rate is easily mistaken for a technique error.

🧼 Hygiene during germination

Moist seeds at room temperature are just as favourable an environment for bacteria as they are for sprouts, and that's the only real point of vigilance with this crop. Rinse and drain thoroughly once or twice a day, never leaving water sitting at the bottom, and keep the sprouting jar in a ventilated room rather than a closed cupboard. Wash the container between each batch, with soapy water or diluted white vinegar, and discard without hesitation any tray that smells sour or shows grey patches. A fresh-sprout smell and clear draining water are the two signs that a batch is going well.
