Kitchen herb sets, from thyme to Thai basil, annuals and perennials

🌿 Annuals and perennials mixed

The distinction that matters in practice is the lifespan of the plant, and it determines where you place it. Basil, coriander, dill, chervil, and parsley are annuals or biennials that you re-sow each year, sometimes twice a season for the first two, which bolt quickly once warm weather sets in. Thyme, rosemary, sage, oregano, mint, and chives are perennials that occupy their spot for several years and fill out from one season to the next. Plant perennials along the edges or in a dedicated bed, and keep the centre of the kitchen garden, which you turn over, for the annuals.

🍃 Six basils, six uses

The basil collection deserves a mention of its own, because this herb goes far beyond pesto. Large-leafed Genovese remains the Italian benchmark, tender and richly fragrant. Lemon basil brings a citrus note that works beautifully with fish and marinades. Thai basil, with its purple stems and anise scent, holds its flavour in a wok where Genovese would lose its perfume entirely. Purple-leaved varieties add colour to a salad without noticeably altering the taste. All of them are grown in the same way, and regular pinching keeps them bushy.

Basil rots if you water it in the evening

A waterlogged grow medium at night causes the stem base to rot within days, and the plant collapses suddenly with no warning signs. Water in the morning, at the base, and allow the surface to dry out between waterings. The same rule applies to coriander, while thyme and rosemary prefer dry conditions between waterings.

A light layer of vermiculite over fine seeds

Most of these seeds are sown barely covered, sometimes simply pressed onto the surface, and watering with a jet will displace them or bury them too deeply. A thin layer of natural vermiculite holds them in place while keeping moisture at the surface. Use a mister rather than a watering can until the seedlings have 2 true leaves.

Regular harvesting keeps leaf production going. Pinch stems just above a pair of leaves rather than picking leaf by leaf, and remove flower buds as soon as they appear on basil, coriander, or dill. Once a plant flowers, it stops producing tender foliage and sets seed, bringing the harvest to an end within a fortnight.

🌊 Sow in succession

None of these seeds are sown at the same time or in the same way. The finest ones, such as thyme, oregano, and marjoram, are placed on the surface and simply pressed down, whereas coriander and dill, being larger, need covering with half a centimetre of compost. Perennials are sown just once, in spring, then left in place, while annuals are sown in successive batches so you always have young leaves to harvest.

Parsley separately

Up to 3 weeks to germinate, the slowest in the kit. Sow it first and be patient.

A 15 to 20 cm pot is sufficient for most, on a bright windowsill or a balcony.

🪴 In a pot or in aquaponics

These species are among the few vegetable garden plants that perform just as well in pots as in open ground, provided two points are respected. The container must have generous drainage holes in the base, as none of these plants tolerates standing water, and the compost should be light rather than rich: a grow medium that is too heavily fertilised produces abundant but flavourless foliage, as essential oils concentrate in poor soils. Allow one pot per species for perennials, which spread, and do not hesitate to group annuals together in a single planter.

Basil is one of the most widely grown plants in aquaponics, where it thrives equally in a bed of clay pebbles and on a deep water culture raft, with modest nutritional requirements; chives and mint also perform very well. Sow them in modules as you would for the garden, then transplant the seedlings at 2 or 3 true leaves.
