In Aulnay-sous-Bois, a larger farm supplies the staff catering and serves as an educational tool, from guided tours to awareness workshops on sustainable agriculture.

Beyond CSR reporting, the benefits are concrete. Employees stop, chat around the installation, share the curiosity of a plant growing next to their workstation. A sense of belonging takes hold and the lunch break gains a new flavour when the salad comes from the building's roof.

The concrete obstacles to anticipate

A recent parliamentary question sums up the situation well : a lack of regulatory clarity, the absence of dedicated funding and high study costs. The sector is still taking shape despite the momentum.

On the ground, the first obstacle concerns health standards. Food production in a professional setting means complying with HACCP regulations, sometimes veterinary approvals if the fish are eaten, and full traceability. A sanitary control plan becomes an obligatory step that must be anticipated with a competent provider.

Add to this the training of staff in the daily monitoring of a biological system, a higher initial cost than an ornamental planting and sometimes internal resistance to an unusual project. None of these obstacles is prohibitive as long as they are anticipated at the design stage.

Far more than a CSR initiative

Aquaponics in a business, a school or a hospital cannot be reduced to a CSR argument, a reporting indicator or an image operation. What strikes you about the pioneers is how much the installation spills beyond the framework in which it was placed. The kitchen, the teaching, the team bond, the conversation, the shared pride, so many effects that no strategy PDF had foreseen.

The movement is only just beginning. The first projects in France and Europe show that the real value of an installation is measured less in kilos of salad or boxes ticked than in the human moments it generates. Frequently asked questions

Figures vary too much from one site to another for a single number to be meaningful, but the cost headings always recur and deserve to be budgeted from the outset.

  • Staff time: a few hours a week for a small system
  • Training of the lead person and a contingency arrangement in case of absence

The most consistently underestimated item is the last one. A living system requires a regular presence, and it is the absence of an identified responsible person that puts a project in difficulty far more than the cost of the equipment.

It is important to distinguish between plants and fish, as the two fall under different regulatory frameworks. Serving salads or herbs grown in an indoor installation in a catering establishment is possible, provided it is incorporated into the site's food safety management plan, with batch traceability, a washing protocol and a proper hazard analysis.

Fish are subject to considerably stricter oversight. As soon as they are intended for consumption, the rules of aquaculture food safety apply, with registration and approval requirements that vary depending on the end use of the product. Work by ITAVI on the regulations as applied to aquaponics shows that this framework remains fragmented across several texts written with other uses in mind, which explains why project holders tend to proceed cautiously. Many institutional installations choose to keep fish as living components of the system, without ever consuming them.

Best practice is to put the question to the local authority responsible for consumer protection before purchasing, not afterwards. The answer will determine the sizing, the choice of species and the route to the kitchen.

Plan for a pair of staff, a trained maintenance operative and a willing teacher, with minimal automation. Two visits per week are generally sufficient.

Partly, and it is better to say so honestly to a care home management team. A meta-analysis published in Frontiers in Public Health in 2022 brought together thirteen studies and 608 participants, concluding that there was a marked reduction in depressive symptoms among older people taking part in structured horticultural activity, with a more pronounced effect in those over 75.

The authors themselves highlight serious limitations: very high heterogeneity between studies, convenience samples, self-reported measures, and a geographical concentration in Asia and Oceania. A review published in Horticulturae in 2023 on long-term care facilities reached a similar conclusion — reported benefits for mood and quality of life, but a still limited body of evidence. Present aquaponics as a promising and well-received activity, never as a treatment.

Not automatically. A British randomised trial published in 2014 in the International Journal of Behavioral Nutrition and Physical Activity found no significant effect of school gardening on daily fruit and vegetable consumption across all participating schools.

The same study does show, however, that schools which had genuinely intensified their practice — progressing three levels on the implementation scale — recorded an increase of around 81 grammes per day. In other words, it is not the presence of a planting bed that matters; it is the frequency of use and how firmly it is embedded in teaching.

Three decisions made at the outset make all the difference. Appoint a lead person and a deputy, include a maintenance budget line in the annual budget rather than concentrating everything on the initial investment, and tie the system to a regular use — a class, a weekly workshop, or a regular supply to the kitchen.

A system with no specific purpose ends up serving no one. As soon as a class, a team, or a chef depends on it, responsibility for maintenance finds its owner naturally.
