Box of organic pepper and chilli seeds
These collections bring together 6 to 15 organic varieties of sweet peppers or hot chillies, one per packet. They should be sown early, under cover from mid-February, for a harvest from July through to the first frosts.

Sets of sweet peppers or hot chillies, from California Wonder to Ghost Pepper
The box of 6 peppers brings you mild fruits and a table chilli in a single package: the Padrón Herbón for grilling whole, the four-lobed California Wonder, the golden yellow Quadrato d'Asti Giallo, the elongated Corno di Toro Rosso, a tomato pepper, and a Lombardo pepper, all belonging to the species Capsicum annuum. The boxes of 8 and 15 chillies range from the moderately hot Jalapeño through to the Ghost Pepper and the Trinidad Moruga Scorpion, combining three Capsicum species.
🌶️ Mild, medium, fiery
Between a sweet pepper and a chilli of the same species, the difference comes down largely to a single molecule: capsaicin. The California Wonder contains virtually none, which makes it perfectly suited to eating raw in strips, whilst the Padrón occupies a well-known middle ground in Spanish cooking, with roughly one fruit in ten delivering a genuine kick. The hottest chillies in the collections, Habanero, Naga Morich, Ghost Pepper and Trinidad Moruga Scorpion, belong to a different species, Capsicum chinense, which is more demanding in terms of heat and often slower to germinate; Tabasco belongs to a third, Capsicum frutescens. The heat level of a given variety also varies with the season: a dry, hot summer produces noticeably hotter fruit.
🍳 What each shape allows
Each fruit shape has its role in the kitchen. Square four-lobed peppers, thick-walled and hollow, hold stuffing and stay firm in the oven without collapsing. Long horn-shaped varieties, with thinner walls, are fiddly to peel but grill quickly and freeze well in strips. The small conical Padrón fruits can be pan-fried in two minutes with a little coarse salt. As for colour, it simply follows ripeness: almost all these varieties go from green to red or yellow, and you harvest at whichever stage suits you, bearing in mind that fruit left to ripen gains in sweetness but costs the plant around ten extra days of production.
Padrón Herbón
Small green fruits harvested young, sautéed whole in oil. One in ten is hot, the rest are not.
California Wonder
The classic square pepper, thick-walled and mild, equally good raw or stuffed.
Quadrato d'Asti
Italian variety with four lobes, golden yellow, with very mild flesh when ripe.
Seed-saving varieties
All these varieties are open-pollinated: seeds from a ripe fruit can be sown again the following year.
A vented dome during the long germination period
A chilli seedling can often sit for 2 to 3 weeks without showing any sign of life, and it is during this wait that the surface of the grow medium dries out and blocks germination. The 40-cell germination kits fit each tray with a dome with adjustable vents, set on a watertight base, so humidity stays stable without daily watering. With 120 spaces across the three trays, you can sow each variety from the 15-variety set in its own row, then open the vents as soon as the first shoots emerge.
Gloves for harvesting extreme chillies
The box of 15 contains some of the world's hottest chillies, including the Trinidad Moruga Scorpion and the Ghost Pepper, and their capsaicin burns skin and eyes on contact alone. Wear gloves when harvesting, cutting, and extracting seeds, never touch your eyes during these tasks, and wash knives and chopping boards thoroughly with soapy water afterwards. Label each plant from the seedling stage, as a young Moruga looks very much like a young Jalapeño and nothing tells them apart before the first fruits appear.

These species are sown earlier than tomatoes because their growing cycle is longer. Allow 4 to 5 months between the seedling stage and the first ripe fruit. Sow at 1 cm depth from mid-February onwards, in a grow medium kept at around 25 °C where germination takes approximately 8 days, pot on into individual modules at the stage of 2 true leaves, and plant out in mid-May once the risk of frost has passed. In cooler regions, a greenhouse or conservatory helps the fruit reach its final colour, as the colour change can take a further 2 to 3 weeks after the fruit has reached its full size.
📦 A kit that lasts several seasons
A pepper plant crops throughout the summer and you rarely grow more than 4 or 5 at a time, so a box of 15 seeds will naturally spread across several years. A Capsicum seed retains its viability for around 3 years when kept dry, cool and away from light: sow the varieties that appeal to you most first, then store the rest in a sealed box.
